I've been seeing a lot of these little protein balls on my favorite food inspiration website. After reading through a few, I came up with this winner:
In a mixing bowl, combine the following:
1 cup oats
1/2 cup almond butter
1/3 cup honey
1 teaspoon vanilla
1 cup shredded coconut
1/2 cup ground flax seeds
1/2 cup dark chocolate chunks
It was easiest to mix with my hands because the almond butter kept getting stuck to the spoon.
Refrigerate for 20 minutes, then roll into bite size balls, put back in the fridge, and grab 'em whenever you want.
(If you really love coconut, roll the balls in the shredded coconut to coat the outside before you return them to the fridge)
