I will definitely be sharing my homemade pesto recipe with you in the coming weeks, but couldn't resist snapping this picture from breakfast the other day.
If you have leftover pesto (which is extremely rare in our house!) try adding it to eggs in the morning! Here's how I make pesto eggs:
Caramelize 1 red onion with a little bit of olive oil, salt and pepper.
Crack a few eggs into the skillet with the onions and use a spatula to stir them and keep them from sticking to the bottom of the pan.
When the eggs are cooked, add the pesto and stir.
